Ginger-Lime Chicken Sandwiches


I noted a few days ago that I've been on a quest this summer for more bun-friendly alternatives to the regular old hamburger. In addition to some delicious ground meat options, I also stumbled upon this awesome grilled chicken breast sandwich that is now extremely high on my "favorite grilled foods" list.

Any time ginger, cilantro and lime are part of the equation, I'm in. So, this recipe immediately spoke to me. Plus, all of the ingredients are staples in my kitchen, so it's a super economical and incredibly flavorful way to mix them up into the perfect summer grilling dish.

Ginger-Lime Chicken Sandwiches

Ingredients
2 skinless, boneless chicken breast halves
1/2 tsp. coarse salt
1/4 tsp. freshly ground black pepper
1/4 c. snipped fresh cilantro
2 tsp. finely shredded lime peel
3 tbsp. lime juice
2 tbsp. olive oil
2 tbsp. honey
1 to 2 tbsp. grated fresh ginger
1/4 c. mayonnaise
2 cloves garlic, minced
4 hamburger buns, split
4 lettuce leaves

Directions
Halve chicken breasts horizontally. Sprinkle with salt and pepper; place in a self-sealing plastic bag set in a shallow dish.

For marinade, in a medium bowl whisk together cilantro, lime peel, lime juice, olive oil, honey, and ginger. Pour over chicken in bag. Seal bag; turn to coat. Marinate in refrigerator for 1 to 4 hours, turning occasionally.

Meanwhile, for garlic mayonnaise, in a small bowl combine mayonnaise and garlic. Cover and chill.

Drain chicken, discarding marinade. Grill chicken, covered, over medium heat for 7 to 8 minutes or until no longer pink, turning once. Brush cut sides of buns lightly with additional olive oil. Grill, cut sides down, for 10 seconds or until lightly toasted.

Spread bun tops with garlic mayonnaise, then assemble: Top bun bottoms with lettuce, chicken breast, red onion slices, if desired, and bun tops.
