Curried Pork Burgers

Burgers are not exactly a go-to meal in our house, but during the summer months there is nothing better than a delicious burger hot off the grill accompanied by some equally delicious fresh fruits and veggies.

This summer, I've been trying to break out of the typical beef and bun routine to try some new flavors and interesting twists on the classic grilled burger. Armed with delicious ground pork from our fabulous farmer, I've been searching for the perfect pork burger recipe and after one bite of this burger, I think I may have found my absolute favorite.

I'll admit, this is not a low fat meal. But if you're anything like me and keep your summer burger count pretty low (I probably average about four burgers in the summer and virtually none the rest of the year), indulging in a really kick ass burger is the only way to go. Why waste all the fun on a lame burger, anyway?!

Curried Pork Burgers

1/4 c. mayo
1/4 tsp. curry powder
1 1/2 lb. ground pork (we reduce to 1 lb. since we like smaller burgers)
1/4 c. finely chopped onion
3 cloves garlic, minced
1 tsp. curry powder
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/2 tsp. ground black pepper
1/4 tsp. crushed red pepper
2 half-inch thick slices onion
2 tsp. olive oil
hamburger buns

In a small bowl combine mayonnaise and the 1/4 tsp. curry powder; set aside. In a large bowl combine pork, chopped onion, garlic, 1 tsp. curry powder, Worcestershire sauce, salt, black pepper, and crushed red pepper. Shape into four patties. Lightly brush onion slices with olive oil.

Grill patties on the rack of a covered grill directly over medium heat for 14 to 18 minutes or until done, turning once halfway through grilling. Add red onion slices the last 8 minutes of grilling, turning once. Grill buns 1-2 minutes or until toasted.

Place lettuce/cabbage on the bun. Spread with mayonnaise mixture. Top with pork patties and some of the grilled onion.
