Maple Chicken

The last few months have been a bit crazy around our house. My husband and I now both have jobs where we’re traveling frequently, which means when we are home, time is spent running errands, working on projects around the house, squeezing in workouts and basically taking care of everything we can before we head off for our next business trips.

As a result, simple, easy and inexpensive meals have become an absolute must to helping us keep our bodies healthy while running on overdrive and keep our sanity with such limited time.

This recipe is so simple, you’ll make it once and never even need the directions again. I originally found this as part of a more complex recipe on the Whole Foods website, and ended up just using the chicken preparation part of it. I pair it with lots of veggies and occasionally some wild rice for an easy, delicious meal.  

Maple Chicken
Adapted from

8 skin-on chicken pieces OR 1 whole chicken
2 tsp. extra-virgin olive oil
¼ tsp. ground black pepper
¼ tsp. salt
1 tbsp. pure maple syrup

Preheat oven to 400 degrees. Place chicken in a roasting pan or on a rimmed baking sheet. Coat with olive oil, sprinkle with pepper and salt. Bake 45 min. or until cooked through. Remove from oven and brush with maple syrup.
