As a result, simple, easy and inexpensive meals have become
an absolute must to helping us keep our bodies healthy while running on
overdrive and keep our sanity with such limited time.
This recipe is so simple, you’ll make it once and never even
need the directions again. I originally found this as part of a more complex recipe
on the Whole Foods website, and ended up just using the chicken preparation
part of it. I pair it with lots of veggies and occasionally some wild rice for
an easy, delicious meal.
Maple Chicken
Adapted from WholeFoodsMarket.com
Ingredients:
8 skin-on chicken pieces OR 1 whole chicken
2 tsp. extra-virgin olive oil
¼ tsp. ground black pepper
¼ tsp. salt
1 tbsp. pure maple syrup
Directions:
Preheat oven to 400 degrees. Place chicken in a roasting pan
or on a rimmed baking sheet. Coat with olive oil, sprinkle with pepper and
salt. Bake 45 min. or until cooked through. Remove from oven and brush with
maple syrup.
