A wonderfully processed birthday


Despite my efforts to eat whole food, even I fall victim to the occasional processed food once in awhile.

Last week was my 29th birthday, so I whipped up the same meal I've been eating for my birthday for many, many years: my mom's potato flake chicken, strawberry Jello with fresh strawberries and Caesar salad, plus an ice cream cake. As a kid, I requested this meal or some version of it every year for my birthday and, much to my mom's delight, have kept up the tradition as an adult.

It's the truest form of comfort food for me and, although the chicken I use is humanely raised and organic, the potato flakes on the chicken, the Jello (with its out-of-season strawberries), and the ice cream cake are all wonderfully processed and wonderfully delicious, even if it's just one day out of the year.

Hey, we all have to have a little wiggle room. Especially when we're celebrating another year of health and happiness.
